1 can chick peas
4 oz roasted red pepper (you can get this in a jar or roast your own)
3 TB lemon juice
1 tsp olive oil (or so)
1 or 2 minced garlic cloves
1/4 tsp cumin
1/4 tsp cayenne pepper
sesame oil or tahini (to taste)
I looked at roast red pepper prices at the store and found it cheaper (and producing less waste) to roast our own. I had never roast a pepper before and it was quite fun. Just clean the pepper place it cut side down in an oiled dish and broil for 12-17 minutes. Then remove from the dish, put it in a bowl and cover with plastic wrap to allow it to soften more in the steam. After it cools (or when it's still hot but you can't wait any longer like me!) you can peel the blackened skin right off. Blend all ingredients together until smooth adding a little more oil or chick pea juice if needed. For the pita chips brush a pita with olive oil, cut into pieces, sprinkle with salt, and cook for 5-8 minutes at 400 or until crisp. Yum!
